Stage 2 jours cuisine des algues : immersion gastronomique
Gastronomie, Nature trips, Round trip / Tour, Workshops
Two days of foreshore, transmission, cooking and tasting
Enjoy an immersive culinary experience in the heart of the village of Meneham with Florence Creachcadec, ethnobotanist and author of the book Les Algues : les connaître, les cueillir, les cuisiner, and Nadia Chichiarelli, professional seaweed harvester.
More than just a cookery workshop, this course takes you deep into the fascinating world of Breton seaweed, from its discovery on the foreshore to its transformation on the plate.
As the tides go by, you'll learn how to discover, recognise, harvest, preserve and use seaweed in complete safety, while respecting the natural environment and regulations. Between accessible theory (20%) and practice (80%), you will explore the main edible species, their uses, their nutritional qualities and the basis for sustainable harvesting.
In the kitchen, it's all about experimentation: culinary techniques, creative recipes, iodine-flavoured tastings and shared meals will help you make seaweed an easy part of your daily routine. From dinner to breakfast, the immersion continues with convivial meals featuring sea flavours, local produce and an approach inspired by macrobiotic cooking.
The little extra: you'll leave with your theory and recipe booklet, a few homemade preparations and the desire to continue cooking with seaweed long after the course is over.
